Cranberry Chicken Bake

A simple seasoned and seared chicken breast finished with a cranberry-based barbecue sauce and baked.

Cranberry Chicken Bake


Cranberry chicken is a very simple recipe - a combination of cranberry sauce turned into a barbecue sauce and baked with a lightly seared chicken.

It's a super easy dish, but the combination of the tart cranberry, with the sweetness of the brown sugar, and just a tiny bit of a kick from some Cajun seasoning, produces a super tasty sauce. Be sure to serve some of that sauce on top of the chicken and also on the side.

It's also a very versatile recipe, so once you get the sauce whisked, give it a taste and adjust the seasonings to your own palate. The original version was primarily chicken and cranberry sauce, lots of variations have come about. It appears that a lot of folks have grown to use onion soup mix for extra flavor.

Can't argue with that!

Instead of the barbecue sauce I'm using, some also include a wide variety of commercial dressings in addition to the cranberry sauce. French or Catalina dressing are both used often, and others seem to have incorporated elements from another vintage recipe called Russian chicken, which by the way is called said name not because it originates from Russia, but because it uses over the counter Russian dressing.

It is also common to skip the searing process and marinate the chicken in the refrigerator overnight in the sauce. Bring to room temperature and dump into a casserole dish for baking. You may also choose to use other cuts of chicken, adjusting cooking times accordingly.
