Lazy Man's KetMayo Sauce

Lazy Man's KetMayo Fry Sauce

This is The Cajun's favorite, general purpose dipping sauce. What can I say? He's a very simple man. I suspect most of it is that besides having a good taste, it's easy to remember. He uses this for just about anything - boiled seafood, fried seafood, and chicken strips, though it's good for French fries, onion rings, fried pickles, and well, a lot of things really, including as a sandwich spread. Since it's a simple combination of ketchup and mayonnaise, I call it KetMayo - akin to a sauce served by a similar name at one of our local restaurants.

One thing I will definitively say is that this is not Comeback Sauce.

I don't know how that rumor started but it has been perpetuated across the internet, because well... that's what happens with the internet now with so many younger folks blogging their recipes. Seeing as I am from Mississippi, and that's where Comeback Sauce originated, I think I can say with some authority that simply mixing mayo and ketchup with lots of pepper is not Comeback Sauce, which is just a tad bit more involved than that. The flavor profile of a genuine Comeback Sauce falls somewhere between rémoulade sauce, cocktail sauce and Thousand Island salad dressing and highly flavored tomato-based chili sauce is an important component. For this Lazy Man's KetMayo Sauce, you'll note there aren't any amounts listed, frankly because it just depends on how much you need. Just use equal parts of mayonnaise and ketchup, add lots of freshly cracked black pepper and a dab or more of prepared horseradish. Add a little hot sauce for some fire.


Recipe: Lazy Man's KetMayo Sauce

Ingredients
  • Equal parts mayonnaise and ketchup
  • Lots of freshly cracked black pepper
  • A dab of horseradish, optional
  • Couple dashes hot pepper sauce, optional
Instructions

Mix together. Use as a dipping sauce or sandwich spread.

Creamy Barbecue Sauce Variation: Substitute barbecue sauce for the ketchup. Great on burgers!

Cane's Sauce Copycat: Everybody seems to love Raising Cane's dipper and copycat's abound. Here's another. For every half cup of mayo, use 1/4 cup of ketchup, plenty of pepper and add in a dash of worcestershire sauce and a couple healthy dashes of garlic powder.
