Cinnamon Honey Baked Apples
In December, I purchased a Holiday Mixed Fruit gift box special that had 44 pieces of beautiful, juicy and delicious fruit - anjou pears, ruby red grapefruit, juice & navel oranges, tangerines & tangelos, and 16 apples, 4 different varieties.
I thought that it was an amazing value!
We ate some, I used some in recipes like my pusharatas and in Mama's apple cake, gave some away with my other sweet holiday goodies, plus we've eaten some ... yet look at this huge bowl full that we still have left!
I can't bear for this to go bad, so I'd better get busy coming up with some ideas to use up all this fruit! I decided to start this morning with some baked apples.
I used the Red Rome today.
Baked apples are so timeless and comforting and they're really super easy to make. Simply wash and scrub the apples and cut away just the upper part of the peeling. Core the apple about 3/4ths the way through, but make sure you don't cut all the way through.
If your apples aren't level, you can also shave off a bit from the bottom to make them stand up straight. Scoop out the insides of the apple core and then stuff with all the goodies!
Drizzle with honey and bake at 375 degrees for 30 to 40 minutes or until tender, basting occasionally. You may also slice up the apples, toss them with the ingredients and bake them in a casserole.
