Green Bean Casserole with Crumb Topping

Green Bean Casserole with Crumb Topping


Green bean casserole is just about as traditional as you can get for the holidays, and I don't care how much folks try to knock it, it's another one of those dishes that are expected down South at both Thanksgiving and Christmas.

For me, it's not the holidays without it!

It's made most often in the classic way that has been around forever ... with our famous red and white can of southern béchamel - better known as Campbell's Condensed Cream of Mushroom Soup!

Well, I decided to try something a little different this time - minor changes - but just a little experiment. Don't worry though, we've got the old standby recipe too, just in case you prefer to stick with all out full classic for the holiday meal.

Here's how to make this version of Green Bean Casserole with Crumb Topping.

Preheat oven to 350 degrees F. Butter a 1-1/2 quart (8 x8 or 9 x9 inch is fine) casserole dish with butter or spray with non-stick spray; set aside. I'm using an oven safe skillet this time and remember, this is an anyday small batch of green bean casserole, so if you're cooking it for a 9 x 13 you'll need to double everything!

If using frozen green beans, microwave according to package directions; drain. If using canned green beans, drain well and set aside.


Chop up a small yellow or sweet onion.


Melt 1/2 tablespoon of bacon fat in a skillet over medium heat and saute the onion until soft, but not browned.


Add the soup and seasonings. Blend together.


Add the green beans and almonds and toss.


Add the milk and blend, stirring over medium heat until warmed and smooth. Taste, add salt if needed. Transfer mixture to prepared casserole dish.


Roughly crush up some crackers.


Add melted butter.


Sprinkle top with the buttered crumbs.


Bake, uncovered, at 350 degrees F for about 25 to 30 minutes or until bubbly.


I'm one of these weird southerners who happens to love green bean casserole in the traditional way, but for a change of pace why not give this version a try sometime? It's delicious. Hope you enjoy it!
