A second collection of great soup recipes for National Soup Month from Deep South Dish. |
January is National Soup Month, though around here it's been more like grilling weather than soup weather. Day before yesterday it was 76 degrees and as humid as a summer day. Ah well, 'tis the nature of the southern seasons, especially here in the coastal Deep South, though every once in awhile Mama Nature throws us a bone to remind us that we really do have short blasts of winter in The South.
I've previously shared with you
ten of my favorite soups for National Soup Month and seems the collection has grown a bit since, so I've updated my list with this fresh rewind of soup recipes, that didn't make the first round-up.

This one actually falls somewhere between a soup and stew, a stoup if you will, all thick and creamy and soothing. This full bodied and flavorful pot of white beans is all due to the ham bone. Add a little more broth to transform this one into a gorgeous soup. |
A creamy version of chicken tortilla soup, made with cooked chicken and fajita seasonings. Served with a garnish of crispy tortilla strips, shredded cheese, sour cream and served here with a side of sour cream cornbread. |
A southernized version of classic Italian Wedding Soup, made with spicy sausage and beef meatballs, collards and black-eyed peas. |
A simple soup made with a ham hock and chicken broth base, with leftover baked ham, bacon and cabbage. |
A creamy chicken soup, seasoned with a mirepoix, that uses strips of flour tortillas as a form of dumpling. The longer the tortillas sit in the soup, the slicker they get, so if you've never tried a tortilla dumpling and you think texture might be an issue for you, simply wait to add them at the very end. |
A hardy soup of navy beans, simmered in a ham bone flavored stock, seasoned with a mirepoix of veggies, Liquid Smoke, garlic, tomato paste, thyme and bay leaf, and plenty of bacon. |
A beef broth and tomato based soup, seasoned with the Trinity, and simmered with smoked sausage, cabbage, sweet potatoes, Rotel tomatoes, and black-eyed peas. |
Homemade French onion soup made with a beef bone enhanced broth and caramelized sweet and yellow onions, topped with croutons and cheese and finished with a little Parmesan. |
A nicely seasoned chicken stock based chowder made with a small roux, sauteed veggies, potatoes, corn, half and half and sweet blue crab. |
Tomato soup made from fresh or canned tomatoes and sweet onions, Vidalias when they are in season. Combine one can of San Marzano tomatoes with a 12 ounce jar of roasted red peppers, and a small jar of sun dried tomatoes for a great flavor boost. Pair this soup with a nice pepperoni grilled cheese sandwich. |
Yak a Mein, or New Orleans Old Sober Soup is most often made from beef, always includes boiled eggs, and is offered with condiments of soy sauce, hot sauce, Worcestershire sauce, and ketchup. It's a little outside of the box and odd to folks who've never seen this combination before, but it's a mighty good soup and known for its restorative, healing powers after a long night in the French Quarter. |
