Easy Spoon Biscuits

This recipe has been around a long, long time, but I've been seeing a form of these all over Facebook here recently as "no yeast rolls," though that's a bit of a misnomer because they aren't rolls at all. I mean, in my eyes, yeast is what makes a roll a roll and gives it that special lift and texture.

This is more like a quick batter bread really, that's poured into a muffin tin for little individual biscuits, similar to those muffin tin spoon rolls, that actually are made with yeast, but are just as easy as these biscuits.

At first, mayonnaise may seem odd as a biscuit ingredient but what is mayonnaise but egg yolks and oil (aka fat), anyway? When you think of it like that, it's not really so weird after-all, because we use butter, sour cream and heavy whipping cream for biscuits, right? Hey, we even use mayonnaise for cakes in the south. Sometimes known as mayonnaise rolls, 3-ingredient rolls, ten minute rolls and 1-2-3 rolls (1 cup milk, 2 cups self rising flour, 3 tablespoons mayo), it's really just another quick dinner bread to add to your repertoire, when you don't have time for yeast rolls, or even rolled or hand formed biscuits! Preheat oven to 425 degrees F. Butter 8 cups on a muffin pan. Combine flour, baking powder and salt. Add milk and mayonnaise and mix thoroughly. Bake for 8 to 10 minutes, or until lightly golden brown on top. Remove from oven and brush with melted butter, if desired.


Dig in!

Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 3 heaping tablespoons full fat real mayonnaise
  • 1-1/2 tablespoons butter, melted, optional
Instructions

Preheat oven to 425 degrees F. Butter 8 cups on a muffin pan. Combine flour, baking powder and salt. Add milk and mayonnaise and mix thoroughly. Bake for 8 to 10 minutes, or until lightly golden brown on top. Remove from oven and brush with melted butter, if desired.
