Roasted Potatoes with Sausage and Vegetables
You may remember a near viral recipe for a simple sheet pan roasted potatoes with onions and sweet peppers flashing across social media platforms the past year or so.
I'm old enough to remember when people just made these kinds of things with little to no fanfare, but hey, if social media can drum up some interest in cooking, well, anything... I'm happy about it!
Food, after all, isn't just about nourishment, although some would have you think so.
It's much, much more than that.
I mean, it literally saved my sanity after Hurricane Katrina when my lifelong career that I had worked so hard to build all of my life - just disappeared practically overnight. That's a story for another day, well, unless you own my cookbook and you already read all about it.
Anyway...
Roasting vegetables, especially root veggies during the winter months, has always been a favorite for me.
Of course, potatoes are probably the all-time favorite for roasting, and they, along with carrots go so well with main dish proteins like a roasted chicken, pork or beef pot roast. Roasting just really brings out the natural sweetness in root vegetables, but also with many other vegetables too.
Sometimes, especially when I haven't necessarily been eating my best-balanced meals, I make this tray of roasted goodies with a bunch of vegetables included. This time I had a pack of mushrooms I needed to use up and dug around to find a bad of stir fry vegetables that The Cajun accidentally picked up when I asked for something completely different, so I decided to include those.
You can easily do this by remembering that sometimes roasting vegetables requires that you add things in stages! You can't really just dump everything on a sheet pan all at once with any success, but you can start with the harder root vegetables and add in other veggies a little later.
Why not add a good quality smoked sausage to the mix to transform this great side to a main dish meal?

Here's how to make my Roasted Sausage and Potatoes with Vegetables.
Preheat oven to 400 degrees F. Line a rimmed baking sheet with foil for easier cleanup and spray or brush lightly with olive oil. You can also give the potatoes a head start by microwaving or parboiling them, if you prefer. Add potatoes to a large bowl.
Add sausage and toss potatoes and sausage with 2 tablespoons oil.
Transfer to baking sheet.
Bake for 45 minutes.
Stir occasionally. Remove and stir again.
Toss together the onion, mushrooms and garlic.
Add to the potatoes and sausage; toss.
Add a bag of frozen pepper blend, California-style or stir-fry vegetables.
Add the veggies to the potato mixture, add seasonings and drizzle with additional oil. Toss together with potatoes and sausage.

Return to oven for another 10-15 minutes or until everything is cooked through and tender.
