Bacon, Pecan and Avocado Chicken Salad

Chicken salad, made with green onion, celery, roasted pecans and bacon and dressed with blend of a mayonnaise and avocado. Serve as a sandwich filling or line individual plates or serving tray with lettuce leaves and scoop chicken salad on top, garnishing with tomato wedges.

C'mon now y'all... what's not to love about a chicken salad with avocado, bacon and pecan?

Well, I for one can attest - it is delicious!

I've noticed when engaging on social media that a lot of folks favor and have one signature chicken salad that they make all of the time and that most everybody knows them for. It's the one that they always bring to events.

I guess in that case, mine would be what I call my deli-style version, a very basic but delicious version, though I've made multiple variations of that one over the years, this being one of them!

The other one that is a top favorite of mine is the one that I patterned after a local tearoom restaurant. It's a little "fancier" than that deli-style version, containing apples, grapes, and pecans and a surprise secret ingredient you might not expect! It's a very lovely chicken salad and certainly deserving of being served on a fresh, flaky croissant roll.

While I love both of those, I really enjoy experimenting with different variations of chicken salads. I have published several versions on the website, with variations included within those, and I have others that I have drafted for future publication so be on the lookout as I add to the collection! 

I don't remember where I saw the idea of including avocado in a dressing for chicken salad, but as much as I love avocadoes, I knew I had to develop a recipe using that as a base.
On my development notes I had written, "THIS IS FABULOUS!!!"
That, pretty much says it all.

This version did not disappoint and if you're a fan of avocado, I know you'll really enjoy this.

Here's how to make my Bacon Pecan and Avocado Chicken Salad.

I decided I wanted to start mine with some roasted pecans, although to avoid turning on the kitchen oven, I did prepare mine in the air fryer - 325 degrees F for about 8 minutes, shaking the basket a couple times. I'm using the Instant Vortex oven style air fryer (#ad) that stays out on the counter. Remember though, all brands of air fryers vary in how they cook, depending on the wattage, so always keep an eye on your food the first time you air fry anything!

You can certainly roast the pecan halves in the oven as well, in a preheated 400-degree F oven for about 8 to 10 minutes, but either way mix 1 cup pecan halves with 1/2 tablespoon melted butter and 1/2 teaspoon salt. I buy this ghee from Amazon (#ad) on subscription so that's what I'm using here. Ghee has a high smoke point and is a clarified butter, meaning its milk solids and water have been extracted, making it more concentrated and great for roasting nuts.


I did my bacon next, yep, also in the air fryer - 370 degrees F for about 8 minutes. I still reserve the bacon drippings from the drip tray when I use this method, of course, but the air fryer sure simplifies the cooking process, and it does a great job.

Y'all... I am not even kidding when I say that having these convenience appliances can certainly make a difference in home cooking and now, with inflation, and increasing food costs, home cooking is even more important!


Rough chop the pecans.


Toss together the chicken, celery, green onion, pecans and bacon.


Remove the seed from the avocado and place into a small bowl with the lemon juice. 


I use a lot of lemons in this house and this is a handy tool (#ad) for juicing them if you like to use fresh lemons.

This masher (#ad) is another handy tool that I use a lot. It's primarily intended to be used for mashing meats during cooking, and it does a great job at that, but I use it for a lot of mashing! Mash together the avocado and lemon. This really helps with warding off oxidation that turns avocado that brownish color so mash and mix it together good.


Add mayonnaise and blend. 


Pour dressing over chicken salad and gently toss. 


Taste and add salt and pepper as needed.


Add additional mayonnaise as needed.


Serve as a sandwich filling or line a serving tray or individual plates with lettuce leaves and scoop chicken salad on top. Garnish with tomato wedges.
