Super easy to make, using fresh or frozen strawberries and frozen lemonade concentrate, it's sure to become a favorite! Vary it by using limeade for the lemonade, or puree cherries or watermelon instead of the strawberry for a different flavor.

This is a basic ground beef casserole, that gets a nice bump of flavor from a mix of vegetables, flavorful seasonings and spicy Rotel tomatoes. Simple and tasty, and The Cajun loves it, going back for seconds, and sometimes, later in the evening, even thirds! Once you have the casserole mixed up and ready to go in the oven, be sure to taste and adjust the seasonings to your preferences.  



Everybody has heard of, and probably had, some kind of sweet, glazed carrots made using brown sugar, honey, or maple syrup or a combination of any of these wonderful flavors - especially around the holidays. But these glazed carrots are pure, unadulterated, simple and savory. Oh my gosh ... if I could roll around in these carrots, I swear I would, they are that good. Even The Cajun, my primary taste-tester, commented when I first served them for dinner, not once, but several times, about how delicious these carrots are, and that's quite a compliment coming from a meat and potatoes man!



I love a classic succotash mixture of baby butter beans and corn, but it's summer, and in the summertime, succotash just calls out for the addition of those fresh, abundant summer vegetables.  Add in sweet Vidalia onions, fresh tomatoes, bell pepper, okra or whatever is fresh at the farmers market or in your own backyard garden. Season with some chopped andouille, smoked ham or turkey and include some of your favorite garden-fresh herbs too. Parsley, chives, dill, basil, thyme or tarragon - they all add their own unique flavor profile. If you are a veggie lover like me, you will love this.






A key lime icebox pie made with cream cheese, sweetened condensed milk and fresh key lime juice, in a graham cracker crust that has a slight hint of coconut. Serve this with a mint infused homemade whipped cream and you've got one refreshing pie, perfect for winding down the dog days of summer.
