Great Northern beans, made easy cooked in the Instant Pot, seasoned with the trinity of southern vegetables and a little bacon for flavor, and served with pan seared or air fried smoked sausage.
Instant Pot Great Northern White Beans
Once upon a time, I didn't think I needed an air fryer. Until I got one.And, I didn't think I wanted a pressure cooker either.
Like many of you, I had witnessed a disaster with one of those old-school, scary stovetop pressure cookers, when our dinner ended up on the ceiling instead of in our bellies, and boy was my Mama mad!
Nope. Never had an interest in going there.
So, I wasn't a whole lot interested in these newfangled ones either.
Until I got one.

Though it can take some experimentation to adapt your favorite personal stovetop recipes to Instant Pot, beans are one thing I've played around with quite a bit. So convenient and so much faster in the Instant Pot and I always do my rice now in one these days too.
For this recipe, I'm using:
- A pound of dried Great Northern beans (Camellia brand is my favorite dried bean)
- The classic vegetable seasoning trinity of onion, bell pepper and celery along with garlic
- A little bacon for flavoring and for drippings to sauté those veggies in
- A pound of andouille or other spicy or mild smoked sausage to serve alongside the beans, and
- Salt, pepper, Creole or Cajun seasoning and a bay leaf to complete the flavor profile.
White beans, so simple and easy with the Instant Pot.
Here's how to make my Instant Pot Great Northern White Beans.
Rinse and sort beans, picking out stones or anything that doesn't belong. Place the beans into the Instant Pot and cover with water, plus about an inch. Add 1/2 tablespoon butter, seal and set for 5 minutes on high. The butter helps to keep the foaming down.
Once the beans are finished, let pressure release naturally.
Drain, but do not rinse; set aside.
Wipe out pot. I'm using my air fryer to cook my sausage separately, but set pot to sauté or browning function, add oil and sliced sausage here and brown them on both sides if you prefer to do it all in one pot. Remove and set aside and add bacon.
Cook bacon until fat is rendered and bacon is softened, but not crisp.
Chop up the onion, bell pepper celery and garlic.
Add to the pot.
Cook and stir for 2 minutes.
Cancel sauté and return beans to pot.
Toss everything together.
Cover beans with 1 quart chicken stock/broth or as here, water with a chicken base, like Better than Bouillion.
Add another cup or two of water, or enough water to cover beans by an inch and toss in a large bay leaf. Seal pot and set for 15 minutes on high; let pressure release naturally.
I love white beans served with smoked sausage, but I'm not crazy about the texture of them cooked in the Instant Pot, so I prefer to either brown them separately in a skillet while the beans are cooking, or as here, air fry them in my Instant Vortex!
As always, timing and temperature will depend on the wattage of your air fryer. Here I'm using smoked sausage, halved lengthwise, cut into pieces, sprayed with the oil and roasted at 400 degrees F for about 8 to 10 minutes, shaking or swapping trays as needed, halfway.
Switch the Instant Pot to sauté, add the sausage to the beans. Taste and add salt, pepper and Creole or Cajun seasoning to taste, as needed. Let simmer for about 5 minutes, stirring several times.
I served these as a side to pork chops, seasoned with freshly cracked black pepper and GrillMates Smokehouse Maple seasoning (recommended by one of you, our readers), and grilled on a preheated to medium high Ninja Foodi grill, cooked for about 12 minutes, turning halfway, or to an internal temperature of 145 degrees F with an instant read thermometer. I also added some quick fix green beans made using canned beans.
Serve over hot rice with a piece of sausage and pass hot sauce at the table.
