Y'all. I can't believe we are halfway through the month of January already!

As much as it seems that life stands still when you're young, I can assure you that when you hit "a certain age" it flies. Seems like my grandchildren were toddlers yesterday and here they are teens and preteens.

I know that a lot of you are on hiatus from your favorite cooking blogs - but don't forget about us!! We're still plugging along and with this crazy weather if you're looking for some great comfort food options to warm those bellies, we've been sharing some good stuff over on social media!

Buttery biscuits baked in apple pie filling with brown sugar, cinnamon and extra apple pie spices, finished with a powdered sugar glaze, makes for a delicious belly-warming sweet treat!




This layered Shipwreck Casserole of ground beef, onions, potatoes, and veggies has been around awhile. It's known by a couple of other names too, like Dinner in a Dish, 7-Layer Casserole or Meal in One Supper, but there are at least two stories of lore that are attached to how the name shipwreck came about.



I am a nut for any kind of custard and this old-fashioned baked custard made from eggs, whole milk, sugar, nutmeg and vanilla is a personal favorite. Add a sprinkling of optional coconut if you like!



The elements and flavors from classic chicken pot pie - chopped chicken, potatoes, peas and carrots in a creamy base - but served as an easy soup with pie crust crackers for dipping.



Prepare this roast for a roast beef meal and reserve some leftovers for this open-faced hot roast beef sandwich, served over white bread and with homemade mashed potatoes, all topped with gravy.



Essentially a coq au vin, these bone-in, skin-on chicken breasts, are simply seasoned and oven braised in a light sauce of chicken broth and wine with vegetables.



Pinto beans, slow stewed with salt pork and sometimes called soup beans, are often served with chopped raw onion, pickled onion or even sweet pepper relish, fried potatoes, and always, cornbread. I'm serving mine with a side of turnip greens also.



I love a good meatloaf! This one is made with ground chuck, onion and sweet bell pepper and finished with a brown sugar ketchup glaze. It's a personal favorite of mine.



A quick skillet stew of sausage with peppers and onions, tomatoes, barbecue sauce and beans. I've used Italian sausage here, but you can use any kind of Italian-style sausage like chicken or turkey, or even a good andouille sausage.




There are lots of opinions on this stew, and ingredients have varied over the years, often using chicken or like here, leftover pork, but one thing is certain, and that is, no matter the region of The South, Brunswick Stew, sometimes called Camp Stew, is a southern favorite.
