Purple hull peas are my favorite southern pea!

They are part of the group of peas, that are really beans, and something that we love so much in the South. It's a summer favorite among many of us.

They are easy to grow too and easier to shell than they used to be when an afternoon of shelling once yielded sore and purple fingers!

They are pretty easy to find at southern roadside stands and farmers markets, both in and out of the pod, though you will pay a premium for somebody else taking the time to shell them for you. Get some and put some up in your freezer y'all and you'll enjoy freshly frozen purple hull peas all year round!

You can also find them in the freezer section of most grocery stores around here and those substitute fine.

In my opinion, purple hull peas really don't need a lot of seasoning meats, and, in fact, less is more here. My favorites are salt pork or fatback,

By the way, just a disclaimer. When I post an "Instant Pot" recipe, while most times these days it's actually done in the branded pot, I still have other electronic pressure cookers/multi-cookers that I occasionally use. The term "instant pot" on my website generically refers to any of those cookers.

Here's how to make my Instant Pot Purple Hull Peas!

First, you'll need to shell them of course and it's a great way to interact with your children, or in my case, grandchildren. In my little old opinion, we need more porch sitting, technology disconnected conversation times like that today if you ask me.

When I buy purple hulls at the farmers market, I like to put them up in the freezer and it really is a simple process - just a good rinse, pick through, toss in some boiling water, boil for about 2 minutes, drain, plunge in ice water till cool, drain and bag.

I've tried several methods of putting up purple hulls, and in my experience, blanching keeps them better and they retain a fresher taste for a longer period of time in your freezer. I use my vacuum sealer (#ad) so I don't freeze them in water, though some folks do.

So satisfying to pull out a bag of freshly frozen purple hulls in the middle of the winter, I'm tellin' y'all!


Rinse peas.


Add the purple hulls to the Instant Pot along with the onion, salt pork and butter.


Because this is a quick cook in the Instant Pot, I'm using chicken stock instead of water to infuse a little extra flavor and since I'm using the original salted version here, I'll wait to add any additional salt until they are done.

Y'all already know that my favorite brand of commercial stock is from Kitchen Basics (#ad). It's just far richer and much more flavorful than a basic store-bought chicken broth.


Add about 3 cups of the stock to the pot.


Or enough to just cover the peas. It really just depends on how much pot likker you want!


Stir that in, seal pot and set for 10 minutes on high.


Let pressure release naturally. Taste, adding salt and pepper to taste, as needed.
