Million Dollar Cheese Bread
You've probably seen Million Dollar Dip and Neiman Marcus Dip all around the internet at some point. As to bloggers of food, it seems to be offered everywhere!
Million Dollar Dip was originally known simply as Almond-Bacon-Cheese Spread and later as Neiman Marcus Dip because that's where the original developer of the recipe, Helen Corbitt, happened to work as Director of Food Services at the Neiman Marcus restaurant, Zodiac Room in Texas, where it is said many of her recipes are still offered.

The original recipe, right from the 1957 Helen Corbitt Cookbook (#affil link) was very basic, including only a few ingredients:
- Roasted unblanched almonds
- Cooked bacon
- Grated American cheese
- Green onion
- Mayonnaise
- Salt
Of course, besides the name changes over the years, as always, there are a number of iterations since it's creation, including using different cheeses and the addition of cream cheese, sour cream and sometimes equal parts of each. Folks who don't much enjoy mayonnaise, often substitute sour cream or yogurt.
Often recipes include a major increase in the bacon, cheese and green onion amounts and others like to add in some heat from the addition of chopped jalapenos, red pepper flakes and/or Creole or Cajun seasoning or cayenne.
One day a reader mentioned that she never knew this as a dip, but as a spread, because it's what she used to make cheese bread, and I thought that was a terrific idea, so that's what I'm doing here!
Here's what you'll need to make my version of Million Dollar Cheese Bread:
- 1 large loaf French bread, split in half lengthwise
- 2 tablespoons unsalted butter, at room temperature
- 1/4 cup finely minced nuts (pecans, walnuts or roasted unblanched almonds)
- 2 strips bacon, cooked crisp and chopped
- 1/2 cup real mayonnaise
- 1 cup freshly shredded cheese, your choice, packed in cup
- 1/8 teaspoon kosher salt
- 1 green onion, sliced
Preheat oven to 350 degrees F and line a rimmed baking sheet with foil for easier clean-up. Set aside.
Add all of the ingredients to a mixing bowl.
Blend everything together.
Please note that I am doing a half recipe in these photos. Split French bread in half lengthwise and spread the softened butter on the cut sides of the bread. Divide the cheese spread evenly between the cut bread and spread out. Place onto the prepared baking sheet.
Bake for 10 to 15 minutes or until lightly browned. To brown further, pass under the broiler. Let rest a few minutes, then cut into 1-inch strips.
