Pineapple Cake


Every once in awhile a gal just wants something a little sweet. Something that tastes good but is easy and not fussy.

This is the cake for that.

In fact, one of the names that it's picked up over time is "Preacher Cake" because it's a cake that one could potentially throw together right after church and before the preacher's home visit, although folks tend to add spices to it now.

Other more popular names, some with variations, include Cajun Cake and Hillbilly Cake, though it's apparently adopted even more along the way. You may know it as Pineapple Sheet Cake, Do Nothing Cake, Funeral Cake and Texas Tornado Cake. I'm sure there are many others!

No matter what you call it, it's an easy and delicious cake that doesn't take a major effort. Right up my alley!

Important Note: This recipe is written for a 9 x 13-inch sheet cake, but I've halved the recipe for the step by step photos here.

Here's what you'll need to make this Pineapple "Preacher" Cake!

For the Cake:

1-1/2 cups of granulated sugar
2 large eggs, at room temperature
1/2 cup unsalted butter, melted and cooled
1 (20 ounce) can crushed pineapple, undrained
1 teaspoon lemon extract
2 cups all-purpose flour
2 teaspoons baking soda
1/8 teaspoon salt

For the Topping:

1 cup packed light brown sugar
1 cup chopped walnuts

For the Glaze:

1 cup powdered sugar
1 tablespoon unsalted butter, softened at room temperature
3 to 4 teaspoons whole milk, or as needed

Here's how to make it!

Preheat oven to 350 degrees F. Set aside a 9 x 13 inch baking pan. As noted, I'm making a half recipe here because, well, because The Cajun isn't a fan of pineapple and I'd end up eating the whole thing by myself!

Beat together the butter, sugar and eggs. 


Add the pineapple with the juice and the lemon extract.


Whisk the flour, baking soda and salt together, then add to the batter about 1/3 cup at a time.


 Adding until fully incorporated. Do not overbeat. 


Stir.


Transfer batter to the ungreased baking pan.


Sprinkle the brown sugar all over the top.


Add the walnuts, spreading evenly.


Bake at 350 degrees for about 35 to 40 minutes (depending on your oven), or until cake pulls away from the sides of the baking pan.


Cake may be served as is, or topped with a powdered sugar drizzle. Let cake rest on a rack until fully cooled, mix together the glaze ingredients and drizzle over the top of the cooled cake. Alternatively, individual slices may be glazed instead.
