You cannot beat a homemade soup, though there's not a single thing wrong with canned soup either, and in fact, you can always find a can or three in my pantry.

I mean how can you not at least have some Campbell's chicken noodle soup on hand?! Seriously.

Some canned soups are better than others of course, but... sometimes, you just want a few servings of soup that's homemade, fresh and hot and not out of a can, but without a lot of work or that makes a massive pot! This is that.

Bacon and Egg Fried Rice

Leftover cooked rice is transformed into a fabulous fried rice dish that starts with bacon, onion and garlic to which leftover or thawed and cooked, frozen mixed vegetables are added along with beaten eggs, all finished with the classic Asian flavors of soy and oyster sauce.

Recently we went to a hibachi dinner for a birthday celebration, and I think half of my plate was fried rice, so I had a good bit of it leftover to bring home. Okay with me!

It was so barely seasoned though, that I wasn't really super excited about eating it, but I figured I would get it home and play around with it because I hate wasting food and I absolutely love fried rice.

Stovetop Rice Pudding

We eat a lot of rice here in the Deep South, more so than potatoes I'd say, although we do eat our fair share of those too. Since rice is grown all over the south though, including Arkansas, here in the Delta regions of Mississippi and over in Louisiana, chances are there is always some leftover rice around.

Storing rice can be a challenge because even rice that is tightly sealed tends to harden in the refrigerator. This is off-putting to some folks so they don't even save leftover rice. They pitch it. Don't do that!

With some variations in cooking method - stovetop, oven or a combination of both - and ingredients - tomatoes versus sauces, pastes or purees - that, which is defined as Spanish Rice across much of the country, is quite similar to Red Rice from the Lowcountry and the base of our beloved Creole Jambalaya of the Deep South.

Okay all you kindred cabbage lovers - if you've been around here any length of time, y'all know how much I love the stuff... though to be honest, 99.9% of the time when I pick up a new head of cabbage, thinking I'll bring something different to the blog, good intentions fall the wayside and I end up making fried cabbage. What can I say? It's an easy dish, and it really is my number one favorite.

Shipwreck Casserole

There is not a single thing particularly unique to me about this Shipwreck Casserole. It's just one of those meat and potatoes, family-pleasing casseroles with a funny name that's been around a long time. It's actually known by a couple of other names too, like Dinner in a Dish, 7-Layer Casserole or Meal in One Supper, but there are at least two stories of lore that are attached to how the name shipwreck came about.

Summer Squash and Rice Gratin

Summer squash - zucchini, crookneck or a mixture of the two will work - is briefly stewed in onion, garlic and cream, mixed with leftover cooked rice, topped with a Parmesan breadcrumb and baked to a crispy golden brown.

As I watched The veggie hating Cajun shovel this in with our meal, y'all know I had to grin, but he caught me peeking at him! "I know," he says, "what is it?" "It's food," I say, grinning. "Just eat it."  He did! Every, single, speck of it. That says a lot y'all, coming from a non-veggie eating man.

This was a delicious side dish that I adapted from Real Cajun, a cookbook that you may recall I recently reviewed. The photography in this cookbook is simply incredible, so much so that as the book lay by my chair on the floor, my youngest cat was convinced that the crab claw poking out of the gumbo on the cover was a real crab. I wish you could have seen him inching and backing off from the book, and finally reaching out and carefully patting at it multiple times with his paw, only then convinced it was just a photo!  If you're a cat owner, this behavior makes complete sense to you.

Broccoli casseroles, whether alone with cheese, with chicken, or like here with rice and cheese, have been a favorite casserole for potlucks, church suppers, family gatherings and especially holidays for as long as I can remember. Many people like to include Cheez Whiz in their broccoli and rice casserole and certainly you can use that, or even our southern favorite Velveeta as well, but I like to use the canned cheddar cheese soup from Campbell's. It's a pantry staple in my house and is an easy addition. Feel free to sub either of those ingredients if you prefer, or simply increase the amount of shredded cheddar to 2 cups, dividing it as noted in the recipe.

Creole Stuffed Bell Peppers

I absolutely adore stuffed bell peppers. The Cajun? Not so much.

Remember his aversion to veggies?

Well, the poor bell pepper falls right into that category of any other whole veggie that is stuffed - even though most often the very veggie he is rejecting whole, is mixed in the stuffing anyway! So, as with any stuffed vegetable, he will just eat the stuffing from a stuffed bell pepper, and throw away the pepper.

Silly man. I mean, he eats green bell pepper a lot. How many recipes do y'all see here that contain The Trinity - onion, celery, and ... hello ... green bell pepper? Lots. Sigh.
