It's sure been another hot summer hasn't it y'all? And it seems to be all over the country so I guess we're all in good company.

Well, it is summer! But... I'm SO ready for fall.

I'm still plugging away over here cooking up a storm anyway. I mean, no matter the weather, we still gotta eat, right?

Still, there are days where the heat is just too exhausting to me and egg salad is a welcome addition, whether stuffed into a fresh garden tomato, spooned onto sandwich bread, or scooped on a plate with some crackers.

Y'all. This sandwich has become one of my favorites anytime because it's filled with all the goodness that I love - eggs and lots of caramelized peppers and onion. The flavor is outstanding!

I don't know much about the origins of this recipe, except that it apparently was common during the Depression, since most folks baked bread from scratch, raised chickens and grew their own backyard vegetables, making eggs and peppers readily available.

I have been using the microwave to make custard for my banana pudding instead of a stovetop double boiler for awhile now.

I know. I know. Just like a microwave roux, it seems controversial, but it really isn't.

Bacon and Egg Fried Rice

Recently we went to a hibachi dinner for a birthday celebration, and I think half of my plate was fried rice, so I had a good bit of it leftover to bring home. Okay with me!

It was so barely seasoned though, that I wasn't really super excited about eating it, but I figured I would get it home and play around with it because I hate wasting food and I absolutely love fried rice.

One of the first things that I did, was to binge watch one of the new featured shows, Magnolia Table, after which I felt compelled to pick up Joanna Gaines cookbooks. Now, a confession.

 Ham, egg and cheese breakfast cups, are little mini omelets, baked in a Texas muffin pan and stuffed into a crispy ham cup. Shown here with mushrooms and spinach, but easily adaptable for your own favorite add-ins, these reheat and freeze beautifully, making them a perfect make-ahead breakfast.

I was flipping through my Woman's World magazine and was reminded about these little cups. I really enjoy that magazine! Have you ever read it?

I used to pick up a copy at the grocery store every now and again, so when I checked on a subscription, at first glance I had a little sticker shock! But after realizing it's actually a weekly subscription and not just monthly, I thought I would treat myself.

The magazine features things of interest to me as a woman - diet, fashion, gardening, health, crafting, spiritual inspiration, new cookbook features and, of course, recipes. This week's issue has the most adorable cupcakes and treats for Halloween so you might want to pick one up at the grocery store. One of the other recent issues featured egg cups similar to those I used to make often when I was working in the corporate world and had that long commute each way, every day.

Egg, Biscuit and Sausage Gravy Breakfast Casserole

This is another one of those recipes that's been making the rounds on Facebook for awhile, made with canned biscuits, a packet of sausage gravy and eggs. Nothing wrong with that!

I wanted to make it from scratch though, so I made up a quick biscuit dough and easy homemade sausage gravy instead. You may certainly exchange that out for the convenience products to save time, but do keep in mind the sodium levels on any pre-packaged product so that you don't oversalt or overseason. You'll need an 8-count can of refrigerated biscuits and a packet of sausage gravy mix that makes 2 cups (such as Pioneer brand).

Some of you will think it's downright silly to have a "recipe" for egg salad, but believe it or not, I get asked all the time how I make mine, and folks land on my other egg salads all the time from Google, looking specifically for an egg salad recipe. I guess they are just looking for approximate measurements, or just curious to see what other folks do. Makes sense to me!

Anyway, I had a craving for some egg salad and made a batch this weekend, so I finally decided to take some photos to put it up on the site. Since many of you are likely on food overload right now from all those Super Bowl eats and probably not really all that interested in any new recipes today, I thought it might be a good time to sneak in a post on the way I like to make my egg salad.

The Cajun is not a big fan of quiche, so I don't make it as often as I'd like to, though I happen to love it. It's as good a meal for lunch or dinner as it is for breakfast in my opinion.

I had a taste for some old fashioned baked custard the other day.  Whether it was the freezing weather prompting the simple warmth of the hot custard itself, or because I hadn't been eating enough eggs lately, the craving was very specific. I wanted this delicious, heart warming custard.

Eggs in Purgatory is one of those recipes that I consider to be a lost classic. You don't hear about it much anymore, though thanks to us bloggers, it seems to be making a resurgence in the past couple of years.

I see folks doing it all the time, but I have never been one to put ketchup on eggs, though I do love them with salsa, especially in a breakfast wrap. I absolutely adore these Eggs in Purgatory though, done up in a bed of thick and spicy creole tomato sauce. They are just delicious!

These creamy eggs were featured in the Spring menu section of the April issue of Good Housekeeping magazine, and it reminded me of how delicious eggs are with herbs, freshly clipped right out of the garden.

Dirty Fried Eggs

Dirty fried eggs is the name I gave them - eggs fried in bacon drippings that gives them that speckled look from all the bacon yum-yums gathered on the bottom of the skillet.

Okay, yeah, it's just fried eggs, but indulge me for a bit would ya? I love eggs. I love all kinds of eggs. Deviled eggs, scrambled eggs, omelets, poached eggs, just plain old boiled eggs, egg salad with shrimp, with ham, and with tuna, eggs on huevos, in quiche, in a hash, as migas, in a breakfast casserole, a quesadilla, on a BLT, and yeah, even on a po'boy! Yep. I do love eggs.

But, this post here - this is just about fried eggs and specifically Dirty Fried Eggs. Aw, heck. Might as well make this post a minor 101 about fried eggs, and then show y'all how we do a proper dirty fried egg down here in The Deep South! After all there are folks who pass through here that are just learnin' to cook, right?

Huevos Rancheros - Rancher's Eggs

Huevos Rancheros, or Rancher's Eggs, was a popular mid-morning meal on Mexican farms and has made it's way to our tables. Great for breakfast, brunch, or breakfast for dinner, lightly fried corn tortillas are topped with a layer of beans, salsa, avocado, a fried egg, crema and shredded cheese with a dash of hot sauce.

I grew up in Biloxi, Mississippi, and back before the casinos became central to tourism here it was a beach and resort party town, and back in the day the primary focus of weekends was centered around all night dancing and cocktails with friends at the clubs. It was pretty standard that we'd all end up in the wee hours of the morning at either the Waffle House or Mary Mahoney's Le Cafe (now gone thanks to Katrina) for coffee and a bite to eat before heading to the house.
