I love mashed potatoes anytime, not just holidays!

While we may tone it down a bit when we make them on the regular, admittedly, holidays are when we usually break out the fancy potatoes. You know the ones. Cream cheese. Whole milk with heavy cream. Plenty of butter!

Those of y'all who have been around any length of time already know I'm not huge on the slow cooker, mostly because I am not a very good advance planner and generally speaking, slow cookers require that! I have some slow cooker recipes here and there because I know it's one more tool to make mealtime happen.

Roasted, baked, twice-baked, butter steamed, in casseroles - no matter how you make them, we sure do love our potatoes in The South and most especially... we really love them mashed and creamy.

Irish Champ Potatoes


Unless Mama Nature intended they be green by her own hand, I'm not big on green colored food for St. Patrick's Day.

Don't get me wrong - I do think it's fun, especially if you have children who can appreciate a quirky green meal, or maybe even a spouse who won't mind the ribbing from their workmates. I love the color green, but I'm not generally too big on using green dye to color things green either.

Well... there might be an exception or two, but essentially my menu of St. Patrick's Day meal ideas is more a mix of traditional Irish food, with Irish-American food, and, well... just good ole regular food that might fit the theme.

It's been a gorgeous spring March week here in south Mississippi, just gorgeous. What? You say it's winter still? Well, not in the Deep South!

We never have much of a winter to speak of down here anyway. Basically, there are one or three quick overnight freezes, just about enough to brown over everything, but the next day it's likely to be in the 70s. I noticed in my Google reader one blogger disappointed about having too much snow and the very next blog, about having no snow. What's the winter been like your way?

Well, y'all knew I had to sneak in at least one more dish for St. Patrick's Day, and this dish of Colcannon is a very appropriate one that I've been meaning to add since last year. Easily grown in Ireland, potatoes have always been a mainstay of many Irish diets, and often are the star of the meal. This little ole Irish lass does indeed love her potatoes.

Pommes Duchesse - Duchess Potatoes

Duchess potatoes are mashed potatoes are mixed with eggs and piped into rosettes, drizzled with melted butter and given a sprinkle of paprika before baking.

Duchess Potatoes are all about the piping, because the edges produce a nice, crust while the potatoes inside remain creamy, but if you don't have a large star tip, you can simply use a plastic zipper storage bag, fill it with the potatoes and cut off a small corner of the bag. Pipe the potatoes into piles of swirls about 2 inches wide but spaced apart where the sides do not touch. They won't pick up the browning on the edges quite the same as the rosettes, but they do still make for a pretty presentation. I love Duchess Potatoes!

Better known I guess as Mashed Potato Patties, but Tater Cakes sound so much more interesting, don't ya think?

The basic seasoning for my potato patties are always garlic powder, onion powder, and of course, a little Slap Ya Mama {affil link}, but honestly you can flavor these up just about anyway you like.

You can also use a variety of coatings in combination with the flour - bread crumbs are standard, panko bread crumbs are superb, but crushed potato chips or tortilla chips work well, especially the flavored and spicy kinds of chips, heck you can even use crushed plain corn flakes! Use your imagination.

Hot dang it is muggy uggy down here along the Gulf Coast. Geez... you'd think it was July already for pete's sake. I was tryin' to get some pics of a few flowers earlier and had to keep wiping the lens and viewfinder between every shot because it kept foggin' up! All I can say is thank the Lord for central air conditioning.

These are the perfect holiday mashed potatoes. Period. Potatoes. Butter. Heavy cream. Whole milk. Cream cheese. And more butter. You really do not need another one. I was watching The Martha Stewart Show and she was making her mom (Big Martha's) mashed potato recipe with Snoop Dogg. (yeah, you heard that right ... Snoop Dogg on Martha Stewart, seems they're BFFs!) Now... in all fairness, this recipe probably isn't a recipe that you'd want to prepare on an every day basis, but more like a special occasion or holiday recipe.
