Fiesta Taco "Boat Dip"

My own take of the TikTok viral "boat dip," made with a blend of sour cream, mayo, taco seasoning, salsa, Mexicorn and Mexican-style blended cheese. It's a perfect addition for your collection of dip recipes!

Fiesta Taco Dip

If you spend any time on social media you may have seen a dip going around recently called "boat dip." There are now such a wide range of variations of that dip out there that it's hard to say what the original recipe ingredients and ratios were, or even who the originator was.

The only thing that seems in agreement is that it was called boat dip because it was a dip that was routinely made to carry on boat trips for that family.

I actually tried quite a few of those variations myself and this one is the one that I settled on.

Cold Corn Dip

If y'all have been hanging around here any length of time, you pretty much know that any kind of dip - from that good old fashioned 7 layer dip that's been around forever, to my more delectable hot crab dip (and everything in between) - are party favorites for me. Though I do actually favor hot dips over cold, I have to say that this corn dip, served cold, is downright delicious and even a tiny bit addictive!

Here it is running up on mid-August already and I realize that I've got quite a few summer posts like this one to catch up on! So don't go fussin' at me for posting a series of non-traditional recipes that may not necessarily fit into the "Southern" recipe box. Besides our southern favorites and classic southern recipes, like everybody else, we also enjoy a wide variety of other foods too, like this.

Cornbread Salad

A delicious salad made using crumbled cornbread and a variety of vegetables, mixed with a mayonnaise and sour cream Ranch dressing and garnished with a little crumbled cornbread, bacon, tomatoes, green onion and parsley. A great addition to your next potluck or party!

Cornbread Salad

I confess. Cornbread salad is not something that many of us grew up knowing about here in South Mississippi, but ever since learning about it a couple years back from Tommie, a dear friend from Oklahoma, I have wanted to give it a try.

While I do think it's more common over that way, Cornbread Salad seems to be making its way across the whole of the South more so these days.

I admit, it does come off sounding an odd contrast of textures, but so many people who are familiar with it seem to love it, so hey, I'm game for anything!

Texas Caviar Salsa - Mississippi Style

Texas Caviar, done up my way, Mississippi style. Sort of a take on a bean salad really, it's simply a mixture of your favorite canned beans, usually the addition of corn, and a variety of chopped raw vegetables, all tossed in a vinaigrette.

Texas Caviar Salsa - Mississippi Style

There are loads of "caviar" recipes out there, most of them simply called Texas Caviar, though quite a few recipes hail from Mississippi too. Even though I can claim roots in both territories, I'm staying out of that debate.

Sort of a take on a bean salad really, it's simply a mixture of canned beans, usually corn, and a variety of chopped raw vegetables, all tossed in some kind of vinaigrette.

Mine is different from the classic Texas style version because I like to play around with the beans a bit.

Hot Corn Dip

This Hot Corn Dip recipe from Trisha Yearwood, is one of the most popular posts on my site since I posted it. And for good reason - it is downright yummy! Y'all might have read my previous post where I got a craving for Trisha Yearwood's Hot Corn Dip when Trisha made an appearance on The View to promote her newest cookbook, Home Cooking with Trisha Yearwood {affil link}

Corn Spoon Bread

Corn spoon bread goes by a number of names, but it's basically a souffle made of cornmeal, corn, sour cream, milk, eggs and butter. A wonderful side dish for any holiday.

Corn Spoon Bread

Corn Spoon Bread, is an old fashioned dish that has been around since the establishment of the colonies, and goes by many names these days - Corn Casserole, Corn Pudding, Corn Spoon Bread, to name a few - though all of those actually started out as completely separate recipes. Pretty much they all now represent a single dish similar to this one.

This is a quick and yummy recipe that you can throw together and have on the table in no time. It's delicious and not too spicy, though you can certainly kick that up if you want to. Believe it or not, I usually don't!

Spicy Rice and Corn Casserole

Jill Conner Browne, Sweet Potato Queen and our own Mississippi celebrity, calls this dish Death Corn Five because it's a great funeral food dish. A mixture of packaged Zatarain's yellow rice with Mexican corn and the addition of jalapeno and pepper jack cheese - it's spicy good!

Spicy Rice and Corn Casserole

This spicy rice dish combines yellow rice, Mexican corn, jalapenos and pepper jack cheese making it flavorful and a perfect side for just about any beef, pork, or chicken dish.

If you don't have Zatarain's products (#ad) in your area, there are several other brands of yellow rice, any of which would be an appropriate substitute. There's also a great recipe for a homemade yellow rice in my cookbook (#ad)!
