So, the other day I had a craving for spaghetti.

I know, crazy, right? Mostly folks have "cravings" for sweet things, but me, I'm more of a savory kind of gal, so when I get a craving it's more likely it's for some kind of savory comfort food.

Maybe chicken and dumplings. Or tacos. Lasagna. Or those little burgers like Krystal's. Roast Chicken. Chicken Pot Pie. Homemade Mashed Potatoes. That sort of stuff.

Anyway, this specific time after our recent carb-heavy holiday meal, I was craving meat and more specifically meat sauce. I started to just make my normal semi-homemade spaghetti sauce, but then, I thought...

Several years back, I was looking through a Martha Foose cookbook, Screen Doors and Sweet Tea, that contained a recipe for what was called a seafood pan roast. Since The Cajun and I don't eat out much, this was an unfamiliar dish for me.

At the time, I couldn't find much about it around the internet either and even today there still isn't much out there. I went ahead and made it, but with no photos to let me know if I was anywhere on track let's just say mine didn't turn out quite right. With the cost of seafood, I abandoned it to experiment a bit more thoroughly another time.

Million Dollar Baked Spaghetti

Million Dollar Spaghetti is another one of those baked casseroles that has been around for a long time, although, it's gotten some recent viral attention on TikTok in the last year.

Like I said in a previous post, with social media, all things old become new again!

Although I am not a TikTok user, or even a fan, I have to admit it is kinda cool to see old recipes getting a revival with some younger folks.

Air Fryer Roasted Tomatoes

Fresh tomatoes, air fryer roasted with onions and whole garlic cloves tossed with olive oil, salt and pepper and blended. Perfect for pasta dishes but use anywhere you would use diced tomatoes or puree them for a more sauced version.

As of this writing, Fall has "officially" arrived, though it does take a while to effect any change here in the Deep South. I mean, as we speak, there's a potential hurricane threatening the Gulf Coast!

Regardless, one thing is for certain, we're getting to the end of local and backyard tomato season.

Though he loves the sauces and casseroles I make with them, The Cajun is not a big fan of fresh, raw tomatoes and he wouldn't dream of a tomato sandwich! Me, I love them and I enjoy them with many meals, including simply sliced with a little salt and pepper, even alongside my breakfast eggs.

There is nothing that can touch a homemade lasagna. Nothing. And let me tell you, when it's made with a sauce made from homegrown, backyard summer tomatoes, it is out of this world. But, like a good classic ziti, it's a labor of love from beginning to end and takes hours. Is it worth it?

You bet it is!

But the time factor pretty much relegates it to being a day off or weekend kind of meal.

When I make a pot of meat sauce for spaghetti, I usually toss the cooked noodles with a few spoons of the sauce, then top each serving with more sauce. Dad mixes the cooked pasta and sauce together and also adds thin slices of Andouille sausage to his meat sauce. I admit, I sure love when he sends a plate of his spaghetti over to me and since The Cajun also loves his Dad's spaghetti, I patterned this version after his.

Spaghetti Lover's Soup

Spaghetti Lover's Soup is easily made either from scratch, or using leftover meat sauce and spaghetti noodles or store-bought pasta sauce. Starting with The Trinity of southern cooking and adding carrots, provides intense flavor to this broth and tomato based soup. Spoon over pasta, sprinkle with a bit of parsley, torn fresh basil and freshly grated Parmesan for a nice finish. Pair it with some garlic bread or slices of a crusty, whole grain bread.

Do you find it hard to find balance in your life anymore?

Seems that there are so many demands on moms and dads and even grandparents these days, that it's hard to get everything done that needs to be done. Children and chores - just those two topics encompass so much on their own... I honestly do not know how all of y'all do it with more than one child. I have a lot of respect for you, that's for sure, and that includes my son and daughter-in-law. Their lives literally exhaust me.

Whew, things have been crazy here for a few months as of this writing - a cookbook launch (#ad) (something I never thought I'd do) {affil link}, 3 trips to Philadelphia for QVC (and I've still not seen any of the historical sights or had an authentic cheesesteak), and let me tell you... I don't know if it's because I'm pretty much a homebody and happy to be, or that I'm older, or both, but travel sure puts a strain on me these days, both for days before and days after.

Then there was a very important family graduation, two potluck dinners with my Uncle Jim before he heads back up to Maryland (thanks for hosting Nikki!), a special honors recognition ceremony for my eldest grandson and a dance recital for my granddaughter.

Now that they are out of school and with summer activities lined up, they're here at the house with us more of the day, and we're also trying to help out where we can with getting them to and fro. The Cajun and I both love having the grandkids - we have a good time and we've both grown very close to them over the last year and I tell ya... they sure have their Paw Paw wrapped around their little pinkie promise fingers.

Recently, I was watching a feature on our local TV channel, where a local restaurant (now closed), was featured. They showed an appetizer dish from their menu, of fried green tomatoes with shrimp, in a tomato basil cream sauce. Well, it looked so good, I knew I had to make my own version of it. I don't know if this is anything like what they have on their menu, but it sure is mighty good and makes a fantastic main dish too.

We're already heading halfway into the month of July, so I guess we're getting pretty close to that final lap of summer, for which many of us will be grateful! I don't know about y'all, but I'm sure praying for a cooler fall and winter this year than last because it's been hotter than the hinges of Hades pretty much everywhere this summer.

Unfortunately though, that also means that we'll be not long before saying goodbye to our favorite summer produce too, so get 'em in while ya can! {Southern Sidebar: Don't you just love how some of us southerners can butcher up the English language with a sentence like that? The grammar police must really love those of us who write on sites like this. Relax. We just like to write how we talk is all.}

For me, it was a busy weekend around here, and appropriately, much of it centered around food. I don't know why I didn't make some aspect of the food industry my career. Sure would have been fitting since I apparently love it so much! It would have been super cool to have done something like this and make a career with it for sure.
