I've never really been a huge fan of crockpot cooking, although like everyone else, I do have a few favorites. Since the introduction of Instant Pots, and electronic pressure cookers overall really, I rarely use a slow cooker. They still have their place of course, especially for recipes like this where you can pretty much dump things in and go about your business for 8 hours.

I ran across this recipe in the book Southern Living's Big Book of Slow Cooking {affil link} and it sounded pretty good, so thought I'd give it a try with a few changes.

So, The Cajun was Super Bowl bonding with his Dad Sunday, and I wasn't all that interested in watching, so I made zero football snacks this year. Instead, I made this soup!

It's a variation of my Grandma's Homemade Potato Soup, this one starting with a little bacon and drippings, and adds in some cubed, baked ham and cheese! Delicious, comforting and easy... how could you not love that?

Grandma's Homemade Potato Soup

An old fashioned, simple, chunky potato soup like Grandma made, with russet potatoes, onion, butter, evaporated milk, a little flour, and seasoned with salt and pepper.

Homemade Potato Soup


Back before there were things like Cheesy Potato Soup with Bacon and Loaded Baked Potato Soup, there was Grandma's Potato Soup. Simple, unassuming, not much more than potatoes, onion, water, butter and milk, really, but so very good and comforting. 

I had about a half dozen potatoes to use up and The Cajun was still having a tender stomach from a bout with the flu, so I peeled those babies and threw them in a pot. The amount of butter here is just a suggestion. You can use more or less at your own discretion as your diet will allow you. 

Unless you're not feeling good - then just throw caution to the wind.

I blame the creation of this Loaded Baked Potato soup recipe on Facebook.  Yep. One day Randy, a reader over there, posted on the wall asking for potato soup recipes so, of course, I gave him links to my Creamy Potato Soup, and my Creamy Cheesy Potato Soup with Bacon. Then, I started thinking... one of those is a shortcut soup and is creamy; the other I used the immersion blender on, so it is also creamy. I really need a chunky potato soup up here on the site.

The next dish of our Irish St. Paddy feast ... soup! Or more specifically, potato soup. With potatoes being a major staple food in Ireland, what could be more appropriate for St. Patrick's Day? Creamy, delicious and just plain ole comforting. What better for a rainy day? And of course, serve that with a slice of Irish Soda Bread, and go ahead, dip it right on in that soup!

There is one convenience product that I use a goodly bit and honestly, it's pretty much a staple down here in the south. In fact, I'd be willing to bet that you could open just about any pantry around town and find any number of varieties of this wonderful canned product.
